Amala Chai taste of India in a cup

I only recently discovered about Chai tea when I was on a cruise holiday and I instantly fell in love with it, from the creaminess and spices it produced. So when I heard about Amala Chai cardamon masala & black tea I just had to try it.

If you have not heard of Chai before it is a flavoured tea beverage which is made from black tea with a mixture of aromatic Indian spices and herbs. It originates from India and the beverage which has grown in popularity, becoming a feature in many coffee, tea houses and cruises.

Back in January 2019, Amala Chai founders Akhil and Archie opened up their first brewing station in Brick Lane, London giving people a taste of spicy fresh masala Chai.

However how did it start?. Back in 2018, Akhil and Archie travelled the Indian Himalayas in Ladakhto to escape the everyday 9-5 job they ended up falling in love with something much greater on their travels masala Chai.

Knowing they already loved Chai as back home Akhil’s Dad would often  brew fresh cups of it, but what struck them more in India was the key role masala Chai played in society. Whether brewed by a street side chaiwala or at a family gathering, Chai creates a space where people from all walks of life can gather and enjoy a moment of community respite! As Chai builds communities, boosts general well-being and provides a breather from the daily hustle and bustle.

From their adventure they became inspired and their mission became simple and that was to produce the highest quality tea with spices to make a delicious and truly authentic masala Chai. 

From that moment onward, they were on a mission not only to create and provide the best masala Chai but also to uphold the community values they had experienced in India.

They begun to source ingredients on their travels from farmers across the country from those families whom have been growing tea and spices for generations to produce masala Chai at home and sell.

Upon receiving my box of Amala Chai I was impressed by the packaging as the masala and Chai comes nicely stored in together in a hard round cylinder and keeping all ingredients fresh.

What makes Amala Chai tea the best choice from other brands well it is because their Chai is super fresh and that is because they use tea from freshly cut tea leaves which are wilted, mechanically crushed, torn, curled and then oxidised, which changes the colour from leafy green to dark brown which provides a delicate and intricate balance. 

All their tea is sourced from farmers who are organic and grow their tea in a fertilised land which produce quality tea over quantity. Plus by sourcing their tea directly from farmers in India means they could cut out the middleman providing nothing short of the best – 100% pure, Assamese tea.

Taste of India in a cup

Upon opening the cylinder and the packets within I instantly was hit by cardamom & spices from the cardamom masala pack and lovely aromas of fresh black tea from the other packet.

The black tea contains Black Assam CTC Tea is made from 100% organic assam tea and the Cardamom Masala contains a balanced blend of cardamom, nutmeg, black pepper, ginger powder and cinnamon.

Easy instructions are provided on the back of the cylinder to serve the perfect Cardamom Masala & Black Tea for one.

Measuring under half a mug of milk, just over half a mug of water, 1 tsp of sugar, 1 tsp of black tea and 1/2 tsp of cardamom masala into a pan over a medium heat stirring regularly for a few minutes I soon had my own freshly brewed Chai.

Amala Chai cuppa of Cardamom Masala & Black Tea provided a real fresh, creamy, smooth, tangy and yet spicy Chai, so tasty and tantalising.

Just 14 cups of India in the cup now left as each cylinder provides 15 servings in all.

Taking it a step further

Taking my packet of Amala Chai a step further I thought I would make a Chai panna cotta from the ingredients which worked beautifully providing a creamy Chai flavoured panna cotta.

Amala Chai


Panna Cotta base
1 leave of gelatine
120ml semi skimmed milk
1/2 tsp black tea leafs
1/4 tsp cardamom masala
100ml double cream
35g light brown soft sugar
Half a leaf of gelatine
50ml cup black tea
25ml light brown soft sugar
1 tsp cocoa powder

Soak the gelatine in a bowl of cold water for 5 minutes. Put the milk, black tea leafs, cardamom masala, cream and sugar in a pan over a low heat. Stir until the sugar has dissolved, then take off the heat. Squeeze the water from the gelatine, add to the pan and mix until dissolved.

Ladle the mixture into two glasses or small moulds, then carefully transfer to the fridge for 6 hours or until set.

For the syrup soak the gelatine in a bowl of cold water for 5 minutes. Add 50ml cup of black tea and the sugar with the cocoa powder into a pan on a low heat until the sugar has dissolved and the mixture is a little thicker and syrupy. Take off heat and mix in gelatine. Leave to cool for a while before topping your base of your panna cotta with a thin layer of the syrup. Then leave again for an hour or so until set.

Amala Chai as I mentioned earlier source their ingredients from Indian farms cutting out the middle man, their cardamom masala and black tea is so fresh from look, smell and taste which provides that perfect cuppa full of aromas and spice. Plus with it being stored in an airtight container and mini re-sealable bags it keeps everything super fresh.

With all that mentioned this is why I highly recommend Amala Chai tea as I believe you won’t be able to buy anything like it in the shops that is as fresh and tasty as what they provide.
